Homebrew

Batch 1 - American Light Ale (SG 1.040-F.G. 1.010)
Brewed-3/11/08 Second-3/16/08 Bottled-3/27/08
Ingredients
My first effort.  Bought an ingredient kit at Fox Valley Homebrew & Winery.  Came with instructions that contradicted the ones that came with the homebrew rig.  Kind of used a combination, stuck to what made sense.  Pitched the years a little too early.  Beyond that, I think it went rather smoothly.  5 Days in primary, ten in secondary carboy, racked to 22oz and 12 oz bottles.  Still a little sweet and flat-ish at 2 wweks in bottle.  Moved bottles to upstairs closet at a slightly higher temp.  Did the trick.  At 3-4 weeks in bottle it was great.
Batch 2 - Canadian Ale
Brewed-May, 08 Second-2 days later Bottled-Jun, 08
Ingredients: 1.8Kg Muton's Hopped Canadian, 2Lb. Light DME, 1Lb Crystal Malt, 1Oz hops flowers, Burton Salt, Ale Yeast.
Turned out too hoppy.  Although extra time in bottle mellowed the bite a bit, still a little much even after 5 weeks in bottle.  Moved to secondary after only 48 hours--as soon as the Kreusen fell.  A little extra corn sugar during bottling made for extra fizz, which O kind of liked.  Very satisfying "Pfffsss" upon opening, especially near the end.  Kept bottles in warmer temps the whole time during aging, might have been overkill.
Batch 3 - Boch (Steam)  (S.G. 1.045-F.G. UK)
Brewed-7/16/08 Second-7/19/08 Bottled-Ongoing
Ingredients: 1.8Kg Muton's Hopped Boch, 1.5Kg Northwestern Gold extract (80%), 1Lb Crystal malt, Saflager S-23 dry lager yeast.
Went for a heavier brew in search of more alcohol.  Had trouble measuring SG, might have been a little higher than 45.  Brewing is getting much easier, flowing better.  This batch looked and smelled the best yet.  Intrigued by the use of Lager yeast at Ale temps...the very definition of Steam... All in all, pretty disappointing brew.  Did not work out like I planned.
Batch 4 - Fat Tire Clone
Brewed Second Bottled
Ingredients:
New owner at my supply store set me up with this recipe.  On brew day I honestly thought this was more of the same.  But I was wrong.  I don't know if it was the hops he suggested or what, but I'm damned if this stuff doesn't taste like Fat Tire.  Not an exact match, but pretty darn close.  I will make this one again.
